Emily Chan here...
My mom had a little sandwich shop called Caroline’s Café; it was attached to the IBM building in Las Colinas right next to my dad’s restaurant, Eric’s Texas Café which was anchored by a beautiful canal. She could get us three girls off to school, work the breakfast and lunch crowd and close the shop in time to pick us up from school. We were always the last kids to be picked up from school, she was always late, but she always showed up. Dad’s restaurant was a whole other animal; it was all consuming and we didn’t see a lot of him. My dad is the one who taught me how to make aebleskivers but my mom taught me pretty much everything else about cooking. Her name was Caroline.
Join us for a special night, a tribute to beautiful memories made around the dinner table…
